Potato Skins with Cajun Dip
Ingredients (serves 2 people)
- 2 large baking potatoes
- Olive oil spray
For the dip
- 120ml / 4fl oz / ½ cup of natural yoghurt
- 1 crushed garlic clove
- 1tsp tomato puree
- ½ a small green chilli, chopped
- Pinch of salt and pepper
Method
- Bake the potatoes in the oven for about 45 - 50 minutes.
- Take them out of the oven, cut in half and scoop out the potato, leaving a thin layer of potato on the skins (save the potato insides for another meal).
- Put the skins on a baking tray, spray with the oil and put back into the oven until crunchy - about 15 minutes.
- To make the dip, mix all the ingredients together and chill.
- Take the skins out of the oven and serve warm with a bowl of dip or a bit of the dip in each skin. Delicious!
